WHITE CHOCOLATE CHIFFON CHEESECAKE

Philips XXL Airfryer was used, but other airfryers should produce similar results.


3 Eggs

Cake Flour 50 grams (or 35g flour + 15 g cornstarch)

Milk 50 grams

Butter 15 grams

Cream cheese 20 grams

White chocolate chips (a handful)

Sugar 30 grams

Vanilla extract (a few drops)

Parchment Paper to line the cake pan

  1. Separate the egg yolks and whites into separate bowls.

  2. Measure out the milk, butter, cream cheese and put in a saucepan.

  3. Turn on medium heat and stir with a whisk until smooth but don't let it boil.  Add chocolate chips and shut off stove.

  4. Whisk the egg yolks and add a few drops of vanilla extract.  Add this to the saucepan and whisk until combined.

  5. Whisk the egg whites (electric mixer is best).  Add the sugar in thirds. Egg whites are ready when stiff peaks form.

  6. Add the cake flour to the contents of the saucepan and whisk until smooth.  Take a big spoonful of this mixture and add to the egg whites and stir.

  7. Combine the egg whites mixture to the contents in the saucepan and stir until smooth and uniform in color.

  8. Pour the cake mixture into the prepared cake pan, lined with parchment paper. 

  9. 325F for about 18-20 minutes.  Test with a toothpick, it should come out clean.

BLUEBERRY EGGNOG MUFFINS

FRENCH TOAST LIL’ BITES 

Philips XXL Airfryer was used, but other airfryers and oven should produce similar results.


2 Slices of white or wheat bread

Butter 

Peanut Butter (or jam or condensed milk), or any nut butter of your choice

2 Eggs

Parchment Paper to line the cake pan

1) Beat the eggs in a large mixing bowl and set aside.

2) On a plate, make a sandwich of the bread slices with butter, peanut butter, or any of the above. 

3) Cut the sandwich in four squares and place them in the egg mixture to soak up all the eggs.

4) Prepare the Airfryer basket by lining it with a piece of parchment paper.

5) Place the pieces of the sandwich with egg mixture onto the parchment paper.

6) Turn on the Airfryer and set for 350F for 10 minutes and check for a golden color on the French toast pieces.

7) You can add maple syrup and butter on top to enjoy.

SPINACH QUICHE

Philips XXL Airfryer was used, but other airfryers and oven should produce similar results.


3 eggs

Vegetable oil (3 tablespoons)

Baby spinach leaves (best to use the salad kind)

Ham (or any cooked protein would also be fine or skip)

Salt and Pepper

Your choice of cheese

Breadcrumbs (optional)

1) Beat the eggs in a bowl and place aside.

2) Use an oven safe baking dish and add the vegetable oil and swirl around the dish evenly.

3) Add a third of the eggs to the dish and sprinkle some cheese.

4) Start to layer the spinach leaves and ham and cheese.

5) Add the remainder of the eggs and top with cheese and breadcrumbs on top.

6) Set AF to 350F and cook for 15-18 minutes.  It's done when golden brown on top.  You can also test by inserting a fork in the middle and should feel firm and no liquid coming out.

SEA SCALLOPS WITH TRUFFLE SALT

Philips XXL Airfryer was used, but other airfryers and oven should produce similar results.


8 Medium or Large Sea Scallops (room temperature)

Truffle Sea Salt (or regular sea salt)

Butter

  1. Make sure each scallop is towel dried and does not have excess water in them and place them on a plate.

  2. Dress each scallop with a little bit of butter.

  3. Use the grill pan attachment of the Airfryer if you have it.  Brush a little bit of oil on the surface of the grill pan.  If the grill pan is not available, whatever comes with your Airfryer basket should work fine.​

  4. Turn to maximum temperature (mine is 400F) and set for 9-12 minutes depending on the number of scallops you have and the size of scallops (more scallops = more time).

  5. Once you see a golden brown crust form on the scallops, they are done!
